Telur Dadar Recipe (Spicy Omelette) 煎蛋

It has been said that “Brightly coloured foods tend to be richer in key substances that protect against diseases.”

Will adding colourful secondary ingredients to a simple omelette pass as eating brightly coloured food?

Ingredients:
2 – 3 Eggs.
1 – 2 stalks Green Onion (Scallion), chopped.
1 Red Chilli (Chilli Padi), sliced and deseeded.
½ – 1 Onion, sliced.
Some shredded Carrots, if desired.
Fish Sauce, Light Soy or Salt, to taste (omit this and see variation below).
A few dashes of White Pepper Powder, optional.
2 – 3 tablespoons Oil, for frying omelette.

Variations:
Add small Prawns or Minced Meat (chicken or pork), amount to desire but be moderate (see recipe link at the end of post).
½ heaping tablespoon Cincalok, instead of salt.

Cincalok is a Malaccan food (see Cuisine of Malaysia) made of fermented small shrimps or krill. It is usually served as a condiment together with chillis, shallots and lime juice. It is similar to Bagoong Alamang (see shrimp paste) in the Philippines and Cencalok in Indonesia.

In Melaka, the shrimp is called udang geragau. The shrimp in the pinkish coloured cincalok are readily identifiable and the taste is salty. This shrimp is available in particular season in Pantai Klebang, Limbongan, Tanjung Kling and several coastal areas. – Wikipedia

Method:
1. Beat the eggs and stir to mix well with all the other ingredients.

2. Season to taste.

3. Heat up a wok or shallow frying pan with the oil on medium-high heat until smoking. Swirl to make sure the oil is spread evenly to coat the wok or pan surface well.

4. Pour the egg mixture gently into the hot wok and swirl to spread egg mixture into an even layer. Turn the omelet over when it’s slightly browned. Fry until both sides are set.

5. Dish out and serve immediately.
