Thai Crispy Crabmeat Omelette Recipe
To make the basic crispy Thai omelette (ไข่เจียว ; khai jiaao), the trick is to heat the oil in saucepan until the oil is screaming hot and start to smoke lightly. Then slowly drizzle in the beaten fluffy egg mixture into the hot oil, allowing them to puff up.

What you’ll need:
16 cm (6″) diameter saucepan (forget the wok!
¾ cup Palm Oil (to fill the saucepan with about 1cm (1/2″) deep.
3 Large Eggs.
3 tsp Light Soy Sauce.
*Some steam-cooked fresh Crabmeat (optional, that’s what I had in this omelette). You can add vegetables or meat also but no more than half cup of these ingredients combined.
Cilantro and sliced red chillies, to garnish.
Using a wire whisk, beat the eggs and the soy sauce until bubbles forms on the surface.
Add crabmeat, if using, to the beaten egg mixture.
Immediately drizzle the eggs to the oil, do it slowly, allow the eggs a chance to rise. As the eggs puffed up, Move around the saucepan and try to drizzle the eggs directly to the oil.
Lower the heat to medium-low; cook until the bottom is almost done and the top is almost dry.
Turn the omelette using a spatula; make sure that the spatula holds at least half of the omelette weight before flipping it over. Use a fork to stable the process. Be careful!! there is a lot of very hot oil in there!
When the bottom gets a nice colour (peep & check) -turn the Omelette for a second time and fry for couple of more seconds. That is done in order to bring the better looking side up.
Place a splatter screen over a bowl and pour the oil and omelette, to drain excess oil.
Side Dip – Chili & Lime Fish Sauce Recipe
3-6 Bird’s eye chilies, with the seeds, cut into very thin rounds.
3 tbs Thai fish sauce.
The juice of half a lime.
3 small shallots, chopped thinly.
Pinch of sugar.
Mix all the ingredients and keep in the fridge in a closed container. Sprinkle gently over food.
