Sweet Potato Fries.

The best thing about using sweet potatoes is that there’s natural sweetness in this root vegetable and we can air-fry or bake them, so we do not need to feel guilty about munching on this side dish unless you want to jazz them up with some cheese!

Sweet Potato Fries Recipe
Here’s what you’ll need:
500g (1 lbs) Sweet Potatoes, cut into strips.
1.5 teaspoon Coconut Oil (you can use any “healthier” oil).
Salt, a few sprinkling or to taste.
Paprika, a sprinkling if you like spicy.
Scallions, optional.
Cheddar or Parmesan, optional.

How to:
1) Preheat the air-fryer to 165C (330F).

2) Rinse cut sweet potatoes in cold water, drain the water well and pat dry with kitchen towel.

3) Place the sweet potatoes in a big bowl and add the oil and salt (and paprika, if using) to them and add the potatoes to the cooking basket and cook for 5 – 7 minutes until crisp.

4) Sprinkle with chopped scallions and grated cheddar or parmesan, if desired.

If you do not own an air-fryer, fret not!
You may also bake sweet potatoes in single layer on prepared baking sheet in a pre-heated oven at 230C (450F) for about 20 minutes (turning occasionally) until the sweet potato fries are tender inside and crisp on the outside. Let the fries cool for about 5 minutes before serving.
