Started at Hill Street in 1932 before moving to Marina Square in 1986 and finally settling down at the current location in Crawford Lane (since 2005), Hill Street Tai Hwa Pork Noodle 吊桥头大华猪肉粿条 is a household name when it comes to Bak Chor Mee (minced pork noodle – BCM). However, eating from a popular stall has its downside – one has to queue for about 45 minutes. Go around 4pm on a weekday and you may not have to queue for long.

This is one of the must-go-to places whenever Vanessa comes back to Singapore for her summer break from Melbourne. We would go during the off peak hours (late afternoon) and there’ll still be a queue albeit shorter. Lunch hour is the worse time to go as the snaking queue can extend past the pillar outside the kopitiam.

On a few occasions, the friendly uncle would even blanch the noodles himself after learning that Van makes a pilgrimage visit to his stall whenever she’s in town. That gesture was quite a privilege as the staff said he doesn’t do that anymore after letting his son take over the helm.

A couple of days ago (the very same day we had Guangdong Mian Shi’s wanton mee for dinner, Valerie and Ryan went there for lunch and dabao-ed a packet for me.

At $5 per bowl for a normal serving in an HDB (public housing) area, the price is quite steep. The S$6 portion BCM comes with a bowl of soup, which is supposedly simmered overnight, with some remnant bits of minced pork and seaweed (you still get the soup but seaweed is not available for the S$5 portion). The sauce for tossing the noodle has black vinegar (which Valerie used to loathe but has now acquired a taste for it) and I thought the amount used was a tad too much. My kway teow tasted overly tangy and its sourness was bordering on provoking my gastric. I should ask for less vinegar next time.

The first time I ate Tai Hwa’s BCM was at Marina Square when I was doing a roadshow there. My retired lawyer godfather who had vested interest in an accessories business with a lady partner also held their stall in the same event. That year was SARS (Severe Acute Respiratory Syndrome) outbreak in 2003. His job was to buy lunch for us, lol… He bought us this BCM meal with a bowl of sui kow (dumpling soup) and I was hooked, line and sinker. Yes, it was that good! Over the years, I felt Tai Hwa’s standard has dropped and that their reputation may have become overhyped. That said, we still enjoy the BCM once in a while. After all, Hill Street Tai Hwa Pork Noodle 吊桥头大华猪肉粿条 remains one of the top 5 most popular BCM in Singapore.

I heard it on the grapevine that one of the relatives who used to work with them has opened his own stall (and serves better version), perhaps that is why Tai Hwa felt the need to announce that they have no other outlets.

    I love this place. It’s the first place I tried my wife’s fave dish, bak chor mee. Because of that I judge all other bcm against this one. So at other places I’m always disappointed by the lack of vinegar!
