Simmered or baked, eaten on its own, with baguette or spaghetti, meatballs are fun food!

Italian Meatballs
Ingredients:
450g Beef, ground.
225g Pork, ground.
1 Egg, large.
½ cup Parmesan Cheese, grated.
½ cup Breadcrumbs (dry).
¼ – ½ cup Milk (mix in slowly till enough to bind).
½ teaspoon Salt (or to taste).
½ – 1 teaspoon Oregano, dried.
¼ cup fresh Parsley, chopped (or 1 – 2 tablespoons dried).
3 tablespoons Garlic, chopped (or 1 teaspoon garlic powder).
Freshly ground Black Pepper, to taste (or about ½ – 1 teaspoon).
Salt, to taste (or about 1 – 2 teaspoons).

Optional:
Wrap a piece of fresh mozarella into the meatballs.

Method:
1. Mix all ingredients in a large bowl by hand.

2. Form into meatballs about the size of a golf ball.

3. Use them immediately or freeze them (up to 1 day) by putting them on a baking sheet lined tray and clingwrap.

4. Drop raw or frozen meatballs into large pot of simmering pasta sauce. Do not stir the meatballs in the sauce for at least 20 (raw) – 40 (frozen) minutes or you will risk breaking the meatballs.

5. By this time, the meatballs should be fully cooked. You may continue to simmer them in the sauce (or remove them and set aside till needed) for as long as the sauce takes to develop full flavour or up to about 3 hours. Stir ocassionally during this period to keep sauce from burning.

Eat on it’s own topped with chopped onions, with pasta or crusty bread.

Alternative: Bake the meatballs at 180°C/350°F for about 30 minutes or till fully cooked. Let them cool completely and freeze them in batches in ziplock bags and use when needed.

    Not sure what’s happening here. This just appeared in my reader but it was posted a week ago? Twilight zone stuff if you ask me. This food looks good.
