The last time I did a post on Singapore’s Beef Noodles, it was the dry version. I had chance upon another stall which I like a lot and actually went on 2 consecutive nights just to savour the intense beefy broth and tender morsels of the cow. The beef broth was simmered for at least 2 - 3 hours, according to the vendor but I suspect more.

The reason why I suspected more was because the broth was so intense, so rich in flavour and the meat so tender and succulent.

The tendons were wobbly when picked up with my copsticks. The bounce was there but they were tender tender tender!

The lime cut off any greasy feel and provided a nice citrusy tang to the soup. The chilli sauce was also good. I liked the options of "self service" to the cilantros and lime on the side. You can take as little as or as much as you like.

Most stalls sell both version. I have yet to try the dry version from this stall. I had mixed beef soup on both nights (second night with noodles).
