Sesame Oil Chilli Sauce

Sesame Oil Chilli Sauce:
300g Chilli Paste
¾ teaspoon Salt
2 teaspoons Sugar
3 teaspoons Light Soy Sauce
5 pieces Shallots, minced
5 cloves Garlic, minced
100g Tomato Ketchup
4 teaspoons Sesame Oil
150g Oil (Groundnut oil is flavourful)

Heat oil, fry garlic and shallots till fragrant. Add chilli paste, stir well till oil exudes. Stir in tomato ketchup, and add seasonings and sesame oil. Cook over low heat for about 20 minutes.

Serve with Chwee Kueh or use as chilli base for Chinese Noodles (Kolo Mee).
