Sambal Sotong

Ingredients:
500g Squid (remove cartilage, scrape off slime and score the insides then cut into bite size).
3-5 tablespoons Sambal Tumis (according to taste).
½ red Onion, sliced (optional, for extra crunch and sweetness).
1 – 2 teaspoons Vegetable Oil (if using onions then 2 tsp oil, otherwise 1 tsp is enough).

Method:
1. Heat oil in pan. Stir-fry onions till translucent, if using.
2. Add prawns and stir-fry for about 2 minutes.
3. Add the sambal tumis and fry till prawns are well coated with the sambal and fragrant.
4. Adjust Salt and Sugar to taste, if necessary (sambal is already seasoned).

Serve with steamed rice, sliced cucumbers and sliced tomatoes or as a side dish to Nasi Lemak.
