Pandan Flavoured Waffles
It was Friday night – license to sleep late. We were watching Breaking Bad and in between the episodes, we felt hungry and needed something a little more than popcorn to munch on. We fingered through the recipe box from A-Z and decided on W for waffles. We haven’t made these for more than a year. Besides, it was fun to involve everyone in the process. So we tore ourselves away from the screen and raided the pantry for ingredients – all checked out, hooray! Ray beat the meringue till it was a shiny foam. Vany measured the other ingredients while I melted the butter. Later, Vany did the cooking and I washed the utensils. All three of us huddled to one side of our small kitchen, cooking, chatting and eating on our feet, all at the same time. Like the linking hearts design on the waffle iron, I felt even more connected to Ray and Vany.

In the recipe below, we used *510ml of Fresh Milk and Pandan Essence to make these delicious crisp but soft centred fluffy waffles.

Ingredients:
DRY Mix:
250g Plain Flour (3xSifted).
125g Self Raising Cake/Biscuit Flour (3xSifted).
1 ½ teaspoons Baking Powder.
1 teaspoon Salt.

WET Mix:
500-560ml Fresh Milk (depends on flour absorption).
3 Egg Yolks (60g Egg Size).
125g Butter, melted.
1½ teaspoons Vanilla Extract.
½ teaspoon Pandan Essence OR 1 tablespoon Fresh Pandan Juice (optional, but I use it because it’s a pandan flavoured waffle post).

MERINGUE:
3 Egg Whites.
60g Caster Sugar.

Method:
1. Whisk egg whites and sugar till glossy stiff peaks form.
2. Sift all the DRY mix and create a well in the centre of the flour.
3. Mix the WET ingredients and beat till combined.
4. Add the WET mix into the centre of flour, stir to form a smooth batter.
5. Fold the MERINGUE into the batter.
6. Heat the waffle iron and ladle batter into it. Do not fill the iron fully as the waffle will expand and overflow.
7. Serve with honey, maple syrup, whipped cream, nutella, kaya, chocolate sauce, ice cream, fresh fruits or nuts.

P.S. Freeze the extras and warm over a griddle or toaster oven when needed.
