Sambal Ikan Bilis Recipe
Fried Anchovies (Ikan Bilis)
200g Ikan Bilis (Dried Anchovies)
Enough Oil for deep frying
3 tbsp Sambal Tumis (more if you like)
1. Heat oil in pot and deep fry the anchovies till golden and crispy.
2. When anchovies are cooked, drain on kitchen towels to remove excess oil.
3. In a pan, heat some sambal tumis and add in the fried anchovies.
4. Stir well to coat and serve warm or cold with a small lime drizzled over just before eating.
P.S. If you cook this dish really dry (use very little sambal, just enough to coat), you can keep it in an airtight container for a few days. Serve as a crispy spicy snack when having ice cold beer 🙂
Serving Tip: As a snack, you may toss in some thinly sliced onions or shallots, sliced red chillies (remove seeds) and squeeze a small lime juice just before serving
in step 3 of “Method”, you can add the sliced onions and sliced red chillies together with the sambal tumis and fry till limp before adding the anchovies.
