Mushroom (Steak) Gravy

Heat olive oil over medium high heat. When oil is hot add mushrooms and sauté, stir-fry until the mushrooms are slightly browned. Reduce heat to medium.

Once mushrooms are browned, it’s time to reduce the heat and add cream.

Add cream to mushrooms and bring to simmering boil. Cook for 5 to 8 minutes, stirring to prevent the mushrooms getting burnt. Do not over boil. Reduce heat if necessary.

Once sauce is reduced by half, add in the chopped garlic and season with  salt and pepper according to taste. Cook for another one minute. Remove from heat and pour into a gravy bowl.

Mushroom Gravy for Steak
Ingredients:
500g Mushrooms, sliced
500ml Cream
2-3 cloves Garlic, finely chopped
1 tsp freshly ground Black Pepper (or to taste)
¾ tsp Sea Salt (or to taste, any Salt is fine)
1 tsp Olive Oil
½ to 1 tsp Butter (optional, more flavour)

Variation: Sauté mushrooms according to recipe and use only 1 tbsp cream to make a side mushroom breakfast item. Use only 1 tsp oil or butter in total for this dish.

P.S. Keep mushrooms fresher longer by removing them from the confines of their plastic container or bag, and transfer them to a paper bag and refrigerate. The increase air circulation will help keep them fresh for up to a week.
