Spicy Fried Chicken Wings

Rub 2kg wings with 1 tablespoon coarse salt to rid smell and slime then rinse well.

Drain dry and marinate with 3 tablespoons corn flour, 2 tablespoons rice flour, 3 tablespoons self raising flour. Add sugar and salt to taste, ½ teaspoon each of turmeric powder, white pepper, sweet paprika, cayenne pepper. A sprinkle of oregano, optional. 2 teaspoons sesame oil. A little water enough to make a paste. Mix well. Marinate for 6 hours or overnight in the fridge.
Note: If you like spicy add chilli powder. Season according to your taste.

Mix well and deep-fry in a pot of medium hot oil till cooked. Cook in batches so as not to overcrowd. Once they are cooked, turn up the heat and re-fry the chicken wings again till the skin is crispy.
